Usage
Bread mix 20 kg. Dough temperature 22-24 C, water 12 liters. Salt 0.3 kg, yeast 0.6 kg. Cut to desired weight. Fermentation time 4 minutes slow, 10-15 minutes fast (spiral) - 20-30 minutes (fork). Baking temperature 220-240 C.
